For a century, Western water forecasts have leaned on a simple idea: more mountain snow means more water in rivers in the spring. But where you measure that snow matters as much as how much you measure.



A new analysis of more than two decades of data across 390 snow-fed <a href="https://www.earth.com/news/planning-for-an-uncertain-future-in-the-colorado-river-basin/">river basins</a> in 11 Western states shows that placing new instruments at strategically chosen “hotspots” consistently delivers better water supply forecasts than trying to blanket an entire basin with broad surveys.



In those basins, adding hotspot sites improved forecast skill by about 11–14 percent on average. By comparison, doing comprehensive basin-wide snow mapping nudged forecasts up by only about 4 percent on average. 



The takeaway is surprisingly straightforward: measuring snow in the right places can help far more than measuring snow everywhere.



<h2 class="wp-block-heading" id="h-where-snow-matters-most">Where snow matters most</h2>



Hotspots are small areas within a watershed where snow conditions punch above their weight in predicting how much water will actually reach streams months later. 



Think of ridgelines, aspects, or elevations where snow tends to persist or melt in patterns that strongly control downstream flow.



Because most existing ground stations sample a tiny fraction of a basin, there’s room to improve forecasts by adding just a few stations - if they’re placed where the snow signal matters most for runoff.



<h2 class="wp-block-heading" id="h-putting-snow-sites-to-the-test">Putting snow sites to the test</h2>



Researchers sifted through more than 20 years of snow estimates and streamflow records, comparing two expansion strategies for monitoring: adding targeted hotspot gauges, or rely on basin-wide mapping (from aircraft or satellites) to capture total snow volume. 



They tested both approaches against the current network of ground stations that operational forecasters use today. 



The team treated streamflow forecasting the way a water manager would, asking how much each strategy improved the year-to-year predictive power for seasonal <a href="https://www.earth.com/news/how-global-greening-could-drain-earths-water-supply/">water supply</a>.



Because different basins respond differently, they repeated the analysis for hundreds of watersheds, from the Cascades and Sierra Nevada to the Rockies and the Great Basin. 



Across that breadth of climates and terrains, the pattern held - focused hotspot measurements typically outperformed broad coverage.



<h2 class="wp-block-heading" id="h-airborne-snow-measuring-has-tradeoffs">Airborne snow measuring has tradeoffs</h2>



Basin-wide surveys are undeniably powerful. Airborne campaigns can directly estimate a basin’s total snow volume, and satellites help paint the big picture over vast, remote areas. The catch is cost and cadence.



Airborne surveys are expensive and can’t fly everywhere all the time. Satellite products are improving quickly but still struggle with forests, clouds, and complex terrain, and they need ground truth to keep forecasts anchored in reality.



By contrast, a handful of well-placed ground sensors can run all season, in all weather, at a fraction of the price. 



The new study shows those stations can deliver similar - and often better - forecast gains precisely because they target the parts of a basin that control when and how snowmelt becomes streamflow.



<h2 class="wp-block-heading" id="h-snowmelt-and-a-warming-west">Snowmelt and a warming West</h2>



On average, about half of the water in Western U.S. streams comes from <a href="https://www.earth.com/news/alpine-spring-begins-earlier-speeding-up-plant-growth/">snowmelt</a>. Cities plan reservoir releases and farmers schedule irrigation based on spring forecasts issued months ahead of peak demand.



But warming winters are shrinking mountain snowpacks and making melt timing jumpier, which raises the stakes for every improvement in prediction.



With budgets tightening, the findings offer a practical roadmap: expand monitoring, yes - but do it surgically. In many basins, adding a few instruments at hotspot locations will deliver more value than trying to map the whole watershed every time snow falls.



<h2 class="wp-block-heading" id="h-what-water-managers-can-do-now"><a></a>What water managers can do now</h2>



One of the most useful outcomes of the study is a framework for identifying where new measurements will help the most. 



Rather than guessing, agencies can now screen a basin to find untapped areas whose snow signals are especially predictive of downstream flow and focus new stations there.



The same framework highlights where basin-wide mapping will add value - for example, in large, highly variable basins where total snow volume swings widely from year to year.



In short, there isn’t a single “best” strategy for every watershed. But there is a smarter sequence: start by asking where a new measurement would most improve the forecast, then pick the tool - a ground station, an aircraft flight, or satellite data - that fits the need and the budget.



<h2 class="wp-block-heading" id="h-adapting-as-snowlines-shift">Adapting as snowlines shift</h2>



Hotspot monitoring isn’t a magic wand. Some basins still benefit from periodic aerial surveys to capture the full snow picture, especially after major <a href="https://www.earth.com/news/how-soil-moisture-can-predict-severe-storms/">storms</a> or in places with complex rain-snow transitions.



Satellites remain essential for regional situational awareness. As climate change pushes snowlines higher, the locations of the most informative hotspots may shift, requiring the network to adapt.



The encouraging news is that the ingredients for better forecasts already exist: decades of streamflow records, a century of snow-station data, rapidly improving remote sensing, and now a tested way to combine them so that each new measurement counts.



The study also shows that many forecasters are closer than they might think to an optimally balanced network - one that blends a few carefully placed new stations with occasional basin-wide snapshots to keep tabs on the big swings.



<h2 class="wp-block-heading" id="h-measuring-what-matters-most">Measuring what matters most</h2>



Snowmelt will remain the West’s water engine, even as <a href="https://www.earth.com/news/climate-change-earth-energy-imbalance-temperature-rise/">climate change</a> makes it less predictable. This work suggests a practical, budget-savvy way to squeeze more certainty out of the same mountains: measure the snow where it matters most.



When every acre-foot counts, a handful of well-chosen hotspots can do more for tomorrow’s water plan than trying to see everything everywhere all at once.



The study is published in the journal <a href="https://www.nature.com/articles/s43247-025-02660-z" target="_blank" rel="noreferrer noopener">Nature Communications: Earth and Environment</a>.

The sensitivity of large leaves unfolding phenology to climate warming has significantly declined since 1980s, according to a study recently published in the journal Nature by an international collaboration of scientists. Earlier spring leaf unfolding is a frequently observed response of plants to climate warming. Many deciduous tree species require cold temperatures, in other words 'chilling', for dormancy release, and the warming-related reductions in chilling may counteract the advance of leaf unfolding in response to warming. Empirical evidence for this, however, was very limited.

To check whether warm winters have already attenuated the advance in spring phenology, an international team of researchers from <a href="http://www.earth.com/image/historic-flooding-has-killed-hundreds-across-china/">China</a>, Belgium, France, Spain, Switzerland and Germany investigated the change in the sensitivity of leaf unfolding to climate warming using long-term observations for seven dominant <a href="https://www.bing.com/search?q=eurpoean&amp;cvid=7acad6dd007c4224812b94a134fa0350&amp;FORM=ANAB01&amp;PC=HCTS">European</a> tree species at 1245 sites in Central Europe.

Their analyses show that leaf unfolding occurred, on average, four days earlier per degree Celcius increase in spring temperature between 1980 and 1994, whereas this advance dropped to 2.3 days per degree between 1999 and 2013, a decrease of over 40 percent. "This lower sensitivity of trees to climate change likely reflects the reduced cold during winter that delays dormancy release. However, we could not fully exclude photoperiod and/or insolation as co-controlling mechanisms. These two factors may also become limiting when leaf unfolding dates occur too early in spring" said Yongshuo H. Fu, the first author of this study. The study provides the first large-scale empirical evidence for a declining sensitivity of spring phenology to warming in mature trees for Central Europe. Professor Annette Menzel from the department of Ecoclimatology at Technical University of Munich who was also involved in the interational research said "The European PEP725 phenological database was a perfect basis to reveal that strong winter warming in the future may result in a slowdown in the advance of spring phenology".

Since plant phenology is a very important determinant of the carbon uptake and water balance of ecosystems, the declining temperature sensitivity of leaf unfolding might reduce the potential of forests to sequester even more carbon than they currently do. However, in the end it may be beneficial for the trees by reducing the risk of late spring frost damage, since extreme climatic events are projected to increase in future.

EPA Administrator Gina McCarthy said the rules, the first national limits on <a href="https://www.earth.com/news/honey-trace-environmental-pollutants/">pollutants</a> from coal-fired steam electricity plants, "will provide significant protections for our children and communities across the country, including minority and low-income communities, from exposure to pollutants that can cause ... serious health problems."
The rule will remove 1.4 billion pounds a year of toxic metals discharged nationwide, including mercury, arsenic, lead and selenium, the EPA said.
The EPA said most of the nation's 1,080 steam electric power plants already meet the requirements. About 12 percent, or 134 plants, will have to make new investments to meet the new rules, including dozens of plants across the South and Midwest.
More than 23,000 miles of rivers and streams across the country are polluted by steam electric discharges, which occur close to 100 public drinking water intakes and nearly 2,000 public wells across the nation, the EPA said.
Toxic metals do not break down in the environment and can contaminate sediment in waterways and harm aquatic life and wildlife, including killing large numbers of fish. Steam electric power plants account for about 30 percent of all toxic pollutants discharged into streams, rivers and lakes from U.S. industrial facilities.
The new standards come as Duke Energy agreed Tuesday to pay North Carolina regulators $7 million to settle allegations of groundwater pollution at its coal ash pits and to perform accelerated cleanups costing millions of dollars at four sites. Coal ash is the waste left after coal is burned to generate electricity and contains toxic heavy metals including arsenic and mercury.
Duke agreed in May to plead guilty to nine criminal violations of the federal Clean Water Act and pay more than $102 million in fines and restitution for failing to contain water contaminated by coal residues at five North Carolina coal-burning plants. A massive spill at a Duke coal ash pond in Eden, N.C., coated 70 miles of the Dan River in gray sludge in 2014.
The wastewater rule is one of three major actions expected this week as the EPA announces a flurry of new rules intended to reduce air and water pollution.
On Tuesday, the agency set new rules to reduce toxic air pollution from oil refineries by forcing operators to adopt new technology that better monitors and controls emissions. The rules will require for the first time that refineries install air monitors along "fence lines" where benzene and other toxic emissions enter neighboring communities.
The EPA faces a court-ordered deadline of Thursday to set a new limit on smog-forming pollution linked to asthma and respiratory illness. Officials are expected to set an ozone limit of 70 parts per billion or less in the atmosphere, down from the existing standard of 75.

Some of the state's largest cities contacted independently reported meeting their mandates.
Officials in Los Angeles said the city saw savings of 17 percent in August, beating its target of 16 percent. Fresno reported a 28 percent drop, hitting its requirement. Water use in San Diego was 21 percent lower, exceeding its mandated cutback of 16 percent.
State officials said they are working with cities and water districts that have failed to meet targeted cuts.
Gomberg said climate change - signaled by warmer temperatures, a low snowpack and intense wildfires - has made water conservation an ongoing effort.
"Climate change is not something that's happening in the future," Gomberg said. "California is already dealing with the impacts."

India Pledges To Slash Carbon Emissions By 35 Percent. As the last major economy to submit a target for a global climate pact, India is pledging to reduce the intensity of its carbon emissions and boost the share of electricity produced from sources other than fossil fuels to 40 percent by 2030.
The world's third-largest carbon polluter filed its climate action plan to the <a href="https://www.bing.com/search?q=germany&amp;cvid=16f93c49322b4d40b31515606b375c86&amp;FORM=ANAB01&amp;PC=HCTS">Germany</a>-based U.N. climate secretariat late Thursday, the deadline for pledges before a December conference in Paris, where governments are supposed to adopt a landmark deal to fight climate change.
In a 38-page submission citing Mahatma Gandhi, the Indian government said it would slash the rate of emissions relative to gross domestic product by 33-35 percent by 2030 from 2005 levels.
It said India has already reduced its carbon intensity by 12 percent since 2005.
The carbon intensity goal will allow India's emissions to grow as its economy expands, but at a lower rate than now.
"It is estimated that more than half of India of 2030 is yet to be built," the government said.
Environmental groups following the U.N. climate talks welcomed India's pledge.
"India now has positioned itself as a global leader in clean energy, and is poised to play an active and influential role in the international climate negotiations this December," said Rhea Suh, president of the Natural Resources Defense Council, an environmental think tank based in New York.
India plans a fivefold boost in renewable energy capacity in the next five years to 175 gigawatts, including solar power, wind, biomass and small hydropower dams.
Even with a major boost of renewable energy, India is also planning to expand coal power - the biggest source of emissions - to satisfy its energy needs. Coal-fired power plants account for about 60 percent of India's installed power capacity.
By 2030, the government said its installed capacity from "non-fossil fuel based energy resources" would grow to 40 percent. It wasn't immediately clear whether that would also include nuclear power.
India said boosting its renewables to that level would require help with transfer of clean technology and financing - two of the crunch issues before the Paris deal, which is supposed to apply to all countries but also include provisions for rich countries to help poor countries fight climate change and adapt to its consequences.
Scientists say the heat-trapping carbon emissions released by the burning of fossil fuels - coal, oil and gas - are a key driver of rising temperatures that could lead to potentially catastrophic impacts, including flooding of island nations and intensifying droughts.
China and the U.S. are the only countries with higher emissions than India. As a bloc, the 28-nation European Union's emissions are also higher.
Like other developed countries, the U.S. and the EU committed to absolute reduction targets, while China pledged that its emissions would stop growing by 2030. India, with more than 300 million people living in poverty, wasn't expected to offer a peak year because its emissions are projected to increase for decades as energy demand rises along with economic growth.
Indian Environment Minister Prakash Javadekar last week told The Associated Press that developed countries should "vacate the carbon space" to allow India's emissions to increase. "That <a href="http://www.earth.com/news/study-reveals-carbon-cycle-trends-of-the-past-50-million-years/">carbon</a> space demand is climate justice," he said.

The primary greenhouse gases in Earth's atmosphere are water vapor (H2O), carbon dioxide (CO2), methane (CH4), nitrous oxide (N2O), and ozone (O₃). Without greenhouse gases, the average temperature of Earth's surface would be about −18 °C (0 °F), rather than the present average of 15 °C (59 °F). The atmospheres of Venus, Mars and Titan also contain greenhouse gases.
Currently, temperatures are about 1.8 C (3.2 F) warmer than in pre-industrial times.
A separate analysis this week by the U.S.-based Climate Interactive group projected 3.5 C (6.3 F) of warming based on the current pledges. Carbon is one of the few elements known since antiquity.

EPA Sets New Ozone Pollution Standard. The Obama administration on Thursday established stricter limits on the smog-causing pollution linked to asthma and respiratory illness, drawing swift condemnation from business leaders and Republicans who warned of damage to the economy.
The Environmental Protection Agency said the new standard of 70 parts per billion will reduce exposure to dangerous ozone pollution and prevent thousands of <a href="http://www.earth.com/news/fine-particle-pollution-may-cause-children-to-develop-asthma/">asthma</a> attacks and emergency room visits and hundreds of premature deaths each year.
Environmental and health groups argued that the rules fall short. The new standard is below the current standard of 75 parts per billion but at the high end of a range announced by the EPA last fall.
The move fulfills a long-delayed campaign promise by President Barack Obama as he works to cement a legacy on climate change and other environmental policies before leaving office in January 2017. After pledging during his first presidential campaign to tighten ozone limits, Obama backtracked in 2011 by yanking the EPA's proposed ozone limits amid intense pressure from industry and the GOP.
White House spokesman Josh Earnest said Thursday the new ozone rule fits into Obama's strategy to cut pollution while promoting economic growth.
Still, the EPA's long-awaited action set up a fresh confrontation with Republicans already angry about the administration's plans to curb carbon pollution from coal-fired power plants and regulate small streams and wetlands.
Business groups said a new ozone standard is unnecessary and could jeopardize jobs. Environmental and public health groups said the new standard was a step in the right direction but did not go far enough.
EPA Administrator Gina McCarthy acknowledged the intense criticism from all sides, but said her job was to set science-backed standards that protect the health of the American people, not take actions "based on popularity."
In a lengthy statement to reporters, McCarthy said the best available clinical data show that 72 parts per billion "is the lowest ozone exposure that causes adverse health effects in healthy, exercising adults."
From there, she decided to add in a "margin of safety" to protect vulnerable populations, including children, the elderly and those suffering from heart and lung ailments. Setting the level at 70 parts per billion "will essentially eliminate exposures to the levels that clinical studies clearly show are harmful," McCarthy said.
McCarthy said the final judgment was hers, and she aimed to set a standard that was "not too high and not too low. It's very challenging. There's no bright line."
Harold Wimmer, president and CEO of the American Lung Association, said the new standard "simply does not reflect what the science shows is necessary to truly protect public health."
The lung association and other groups have pushed for an ozone limit of 60 parts per billion, saying it would have given Americans much greater health protections. The stricter standard would prevent thousands of premature deaths and nearly 2 million asthma attacks per year, the lung association said.
Business groups also reacted harshly. The National Association of Manufacturers and other groups had lobbied the White House in recent months and spent millions on a TV ad campaign decrying the pending ozone rule as an overreach and a job killer.
"We know that this regulation could have been worse, but it still feels like a punch in the gut," said Tom Riordan, president and CEO of the Wisconsin-based Neenah Enterprises Inc. and task force leader for the manufacturers group.
Riordan said the EPA rule put "politics above job creation" and said manufacturers across the country, especially smaller ones, "will be forced to choose between navigating this rule and hiring new workers, between complying with Washington's mandates and giving raises to their employees."
The rule issued Thursday meets a court-ordered deadline set after public health groups sued in the wake of the administration's 2011 withdrawal of ozone rules.
At least one environmental group vowed to challenge the new standard in court, and business groups said they also were considering a legal challenge.
Cutting ozone emissions to 70 parts per billion would cost industry about $1.4 billion in 2025, the EPA said, far below benefits estimated at $2.9 billion to $5.9 billion annually.
Aiming to smooth the transition, the EPA plans to give states that have the most ozone up to 2037 to come into compliance. But McCarthy said most of the U.S. won't have to take any action, thanks to existing pollution programs and previous EPA limits on pollutants such as mercury and carbon dioxide that have the side benefit of reducing ozone.
The EPA said only 14 U.S. counties would likely fail to meet a standard of 70 parts per billion in 2025, a figure challenged by business groups and Republicans.
The new rules could affect job growth in nearly one-third of the nation's 3,000 counties, said Jack Gerard, president of the American Petroleum Institute, the oil industry's top lobbying group. That's up from 217 counties affected at the current ozone standard, he said.

The ground there is rising at a remarkable rate. Over the past decade, some areas have lifted about 20 centimeters, which translates to roughly 2 meters per century. This rate significantly exceeds current projections for sea level rise.



<h2 class="wp-block-heading" id="h-geological-rebound-process-through-climate-change">Geological rebound process through climate change</h2>



The mechanism behind this phenomenon is straightforward. As the ice sheet melts, the immense weight is removed from the bedrock, causing the land to rebound upward. This process resembles the way compressed material springs back when pressure is released.



<h2 class="wp-block-heading" id="h-scientific-monitoring-networks">Scientific monitoring networks</h2>



Researchers at the <a href="https://www.dtu.dk/english/" target="_blank" rel="noreferrer noopener">Technical University of Denmark</a> are documenting this uplift using the GNET network, consisting of 61 GPS stations positioned around Greenland's coast. These sensors can detect movement with millimeter precision, providing detailed measurements of the ongoing changes.



The data reveal that current uplift rates exceed the gradual rebound occurring since the last ice age ended approximately 12,000 years ago. This acceleration corresponds directly with increased ice sheet melting rates.



<h2 class="wp-block-heading" id="h-coastal-transformation">Coastal Transformation</h2>



This uplift is actively reshaping Greenland's coastline. New islands and rocky formations, called "skerries," are emerging as previously submerged land surfaces rise above the water level. This represents a notable contrast to global concerns about rising seas.



The study, published in Geophysical Research Letters, demonstrates the varied regional impacts of climate change. While many locations face rising water levels, Greenland's bedrock is literally rising above the surrounding seas.

MYC presents a unique challenge when studying cancer. Normally, this protein plays a vital role in healthy cells. It carefully controls transcription - the process that converts genetic information from DNA and RNA into proteins.



However, cancer changes everything. In cancer cells, MYC becomes a destructive force. It operates in overdrive mode with no regulation whatsoever.



Professor Min Xue, who led the research team, explains it simply: "MYC is less like food for cancer cells and more like a steroid. It drives cancer's aggressive growth." This superactive behavior makes MYC involved in three out of every four cancer cases.



<h2 class="wp-block-heading" id="h-why-myc-is-hard-to-target">Why MYC is hard to target</h2>



Despite its clear role in cancer, targeting MYC has been one of medicine's biggest challenges. The main problem lies in MYC's unusual structure - or rather, its complete lack of structure.



Professor Xue describes the protein as "basically a glob of randomness." This means conventional drug discovery methods don't work. These traditional approaches rely on sharply defined protein structures. MYC simply doesn't have one.



<h2 class="wp-block-heading">A New Approach to Fighting MYC</h2>



The UCR research team developed a clever solution. They designed a special peptide molecule that could selectively bind to MYC. More importantly, this peptide could block MYC's destructive activity.



The key was fine-tuning two specific features: the peptide's stiffness and its shape. Through careful adjustments, researchers achieved something remarkable. They reached "sub-micro-molar affinity" - meaning their peptide binds as strongly as antibodies do.



<h2 class="wp-block-heading" id="h-breakthrough-results">Breakthrough results</h2>



This accomplishment represents a major leap beyond previous attempts. The researchers enhanced their peptide's binding strength by two orders of magnitude. This dramatic improvement brings the work significantly closer to practical drug development goals.

Located near <a href="https://townofcairo.com/" target="_blank" rel="noreferrer noopener">Cairo, New York</a>, in Greene County, these weren't merely primitive plants struggling to survive. These were sophisticated trees with root systems remarkably similar to modern forests. This ancient woodland predates dinosaurs by 140 million years.



<h2 class="wp-block-heading" id="h-the-cairo-forest-discovery">The Cairo forest discovery</h2>



385 million years ago, upstate New York was a tropical paradise near the equator. Thanks to continental drift, this ancient forest has traveled thousands of miles to its current location.



The fossil forest sits in an abandoned quarry, roughly half the size of a football field. This represents just a slice of what was likely a massive forest system stretching from New York into Pennsylvania.



Charles Ver Straeten, curator of sedimentary rocks at the <a href="https://www.nysm.nysed.gov/" target="_blank" rel="noreferrer noopener">New York State Museum</a>, made the discovery in 2009. While scouting the former highway department property, his trained eye spotted wandering patterns in the stone that looked like marine features.

Some fossilized roots are six inches (15 centimeters) in diameter, forming 36-foot-wide (11-meter) patterns. These giants grew up to 65 feet (20 meters) tall with five-foot-diameter (1.5-meter) trunks.

These trees fundamentally changed Earth's environment. Kevin Boyce, a Stanford University geoscientist, explains how their deep roots triggered "weathering," chemical reactions that pulled carbon dioxide from the atmosphere.

Patricia Gensel, a <a href="https://www.unc.edu/" target="_blank" rel="noreferrer noopener">University of North Carolina</a> paleobotanist, notes: "The size of those root systems is really changing the picture. Even 20 years ago, researchers assumed trees with such complex root systems didn't evolve so early."



The Cairo site presents three unique root systems, suggesting Devonian period forests were diverse ecosystems with different trees occupying different environmental niches, much like today's forests.

In 2022, New York State Senator Michelle Hinchey secured a $170,000 grant for the town of Cairo to construct specialized fencing around the fossil forest site. The town plans to conduct a feasibility study exploring the possibility of creating an educational center and working lab on-site.



Joe Hasenkopf, chair of the Cairo Planning Board, hopes to partner with educational institutions to create a research facility serving scientists, students, and the public.

The second wave hits around age 60, involving changes in carbohydrate metabolism, immune regulation, kidney function, and again cardiovascular and muscle health.

"It's possible some of these changes could be tied to lifestyle or behavioral factors that cluster at these age groups, rather than being driven by biological factors," Snyder explained. For instance, alcohol metabolism dysfunction might result from increased consumption during the typically stressful mid-40s period.



The changes at age 60 are perhaps less surprising, as this is when many age-related diseases begin to manifest more prominently. The molecular shifts affect immune function and kidney health, both critical for maintaining overall wellness as we enter our senior years.

Scientists are transforming chocolate into a functional food by infusing it with probiotics and prebiotics, aiming to create a treat that satisfies cravings while supporting gut health. 



The challenge lies in maintaining chocolate's beloved texture and flavor while adding health benefits.

Probiotics - beneficial microbes that balance gut bacteria and aid digestion - are typically fragile and can be destroyed by stomach acid or processing. 



Prebiotics act as food for these microbes, helping them thrive. Together, they form "synbiotics," a powerful health combination.



Researchers Smriti Gaur and Shubhi Singh from India's Jaypee Institute of Information Technology took an innovative approach, using natural prebiotics like corn and honey instead of complex processing methods. 



They created five chocolate varieties: a control and four synbiotic versions containing different combinations of prebiotics, probiotics (Lactobacillus strains), and flavor enhancers (cinnamon or orange).



Laboratory simulations of human digestion showed the probiotics remained viable for over five hours, suggesting they could survive long enough to benefit gut health.



Taste tests were positive, with researchers particularly enjoying the orange-flavored variety, describing it as having "vibrant citrus notes" complementing the "rich cocoa" with a "luxurious" texture.



This research represents just the beginning. With further refinement of strains, textures, and flavors, chocolate could evolve beyond mere indulgence to become a functional food that nourishes while it delights.



The study is published in the journal <a href="https://pubs.acs.org/doi/10.1021/acsfoodscitech.4c00741" target="_blank" rel="noreferrer noopener">ACS Food Science &amp; Technology</a>.

Today’s Video of the Day from the <a href="https://www.esa.int/">European Space Agency</a> features Nushagak Bay, a large estuary in southwest Alaska. Nushagak runs mainly north to south and exits in Bristol Bay, a large body of water in the Bering Sea.



"The bay is primarily fed by the Nushagak River, which begins in the Alaska Range and flows southwest approximately 450 km. The bay is also fed by several additional rivers including the Wood, Igushik, Snake and Weary rivers," says ESA.



"The dark colors of the Nushagak River are most likely due to tannins or lignins (chemical substances found in plants). Tannins and lignins from roots, leaves, seeds, bark and soil can leach into the water and give it a brown or even black colour. The sediments then flow southwards where it is mixed with the bluer waters of the bay."

Today's Video of the Day from the <a href="https://www.acs.org/">American Chemical Society</a> (ACS) reveals that proteins on flu viruses are actually flexible, tilting and waving in a “breath-like” motion. According to the experts, these proteins could be used to better defend against the flu.



"The main antigenic targets of influenza virus are two surface glycoproteins, hemagglutinin (HA) and neuraminidase (NA). Whereas the structural and dynamical properties of both glycoproteins have been studied previously, the understanding of their plasticity in the whole-virion context is fragmented," wrote the researchers.



To investigate, the team conducted detailed simulations of the influenza A H1N1 virion, or the swine flu. The experts concluded that the visualizations show many new vulnerable states of flu viruses, which could improve future vaccines and antiviral drugs.

Today’s Video of the Day from the <a href="https://www.esa.int/">European Space Agency</a> features Lake Trasimeno, which is located west of Perugia in central Italy. It is the fourth largest lake in the country. While Trasimeno’s water level varies, it has a maximum depth of approximately six meters.&nbsp;



"In this Copernicus Sentinel-2 image, captured on 6 August 2022, the lake’s emerald green colour is likely due to the presence of phytoplankton. Streaks in the water, particularly visible in the west, indicate the presence of soil and sediments which have been stirred up by winds. Dark colored waters in the southern part of the lake indicate a presence of submerged and floating macrophytes (aquatic plants) as well as algae," says ESA.



"Surrounded by hills on three sides, Trasimeno is subject to heavy storms created by winds, especially from the north and west. There are three islets in the lake: Maggiore, Minore and Polvese (the largest). The lake’s shores are sparsely inhabited with only two popular villages: Castiglione del Lago and Passignano sul Trasimeno."



"Italy is experiencing its worst drought in 70 years which has affected drinking water supplies, hydroelectric power and agricultural production. High temperatures, hot winds and lack of rainfall are the main causes of drought in the Umbrian region which saw Lake Trasimeno’s drop 1.3 m, reaching the limit of the hydrometric zero in July 2022."

Today's Video of the Day from the <a href="https://www.acs.org/">American Chemical Society</a> describes a new self-powered nanosensor that can instantly detect mercury contamination with the tap of a finger.&nbsp;



The oxidized form of mercury can be harmful when it is ingested through contaminated water or food. This makes it necessary for experts to develop sensors that can quickly and accurately detect the presence of mercury.&nbsp;



Zong-Hong Lin and colleagues have now created a triboelectric nanosensor (TENS) that can detect mercury by simply by touching a sample. According to the researchers, their TENS could serve as the basis for similar devices to safely and remotely monitor other pollutants.

Today’s Video of the Day from the <a href="https://www.esa.int/">European Space Agency</a> features Kainji Lake, a reservoir on the Niger River.



In 1968, Kainji Lake was created by the construction of the Kainji Dam. The Niger River, the third longest in Africa, enters the lake in the north.&nbsp;



According to <a href="https://www.earth.com/news/rivers-in-the-american-west-are-a-lifesaving-resource-for-birds/">ESA</a>, the creation of the lake submerged Foge Island and the town of Bussa and permanently flooded other riverine settlements, leaving around 50,000 people displaced.&nbsp;



Large parts of Foge Island are temporarily exposed during low water tides, and the land is often used by migrating fishermen. Kainji Dam is a dam across the Niger River in Niger State of Central Nigeria. 



Wild mammals occur at relatively low densities due to illegal hunting. Lake Kainji has suffered a dramatic decline as a fishery due to the high numbers of artisanal and subsistence fisherfolk using the lake. It has been suggested that a period of closure, together with controlled fishing rights may help improve fish stocks.



Kainji Lake National Park is the oldest of its kind in Nigeria. The park contains three distinct areas: a part of the Kainji Lake, the Borgu Game Reserve to the west of the lake, and the Zugurma Game Reserve to the southeast. The park is home to around 65 mammal species, 350 bird species, and 30 species of reptiles and amphibians.

Today’s Video of the Day from <a href="https://www.igb.illinois.edu/">Carl R. Woese Institute for Genomic Biology</a> reveals how scientists can modify common crops like soybean, rice, and wheat to protect them from heat stress.



“We need to double crop production by 2050 to feed a growing global population, and not only are we not on track to do that, but climate change is further complicating things,” said Amanda Cavanagh, a lecturer at the University of Essex. 



The study is part of Realizing Increased Photosynthetic Efficiency (RIPE), an international research project that aims to develop food crops that turn the sun’s energy into food more efficiently.



“Using an engineering approach we designed multiple alternative metabolic pathways to photorespiration. Testing them in the field showed increases in productivity which led Amanda to significantly move the project forward by showing our engineered plants can withstand pretty extreme temperature stress,” said study co-author and RIPE researcher Paul South.&nbsp;



“As the climate changes and temperature stresses increase the pressure on our global food supply, farmers will need every tool available including engineering approaches like the synthetic biology used here to maintain safe and productive harvests.”



The experts tested plants modified to have more efficient photorespiration to see if they were better adapted to warmer temperatures.&nbsp;



The team found that the engineered plants produced 26 percent more biomass than the wild-type plants exposed to the same temperatures, and had 15 percent less yield loss under the higher temperatures.

Today’s Video of the Day from the <a href="https://www.acs.org/">American Chemical Society</a> explores the ability of salt to transform the way that foods and beverages taste. Salt is known to cover up undesirable flavors, such as bitterness in coffee or beer, but how exactly does sodium chloride change the taste of other compounds?



One previous study showed that, not only does salt suppress bitterness, but also enhances sweetness and sourness. Another study revealed that bitterness reduction by salt seems to be happening at the tongue receptor level as well as in the brain.&nbsp;



While it is known that salt taste is mediated by the presence of sodium channels in the form of taste buds, experts believe that there is also an unknown receptor responsible for how we taste salt that has not yet been identified.&nbsp;

"The city lies in the centre of the country’s central valley around 80 km from the Pacific Ocean to the west and borders Argentina to the east. A tiny part of Argentina is visible in the top-right corner of the image where the mountain crest of the Andes Mountains acts as a divider between the two countries," says ESA.
